This was such a fun cake to make! This was a chocolate vegan cake made for Xavier for his 3rd birthday. He’s obsessed with all things trains, especially Thomas the Tank Engine, so I borrowed a few children’s books and did my research on Thomas & Friends and decided to make a train station scene. I found a special birthday edition Thomas train, which was a cute addition..to the cake and Xavier’s ever-growing train collection. It was adorable how he recognized every single figure/detail on the cake, even Sir Topham Hatt!

This cake has been a looong time coming! I had been wanting to make this camera as a groom’s cake for my brother’s wedding since July, but with 300 favors in the making, clearly didn’t have the time then! So I decided it would make the four hour trip down to Maryland to make a special appearance on his birthday. 🙂

This has definitely got to be my most ambitious cake, since I had never actually carved a cake before. The base was made out of four layers of my signature vanilla cake while the lens was made out of homemade rice krispie treats. I used Ace of Cakes star Duff’s line of fondant, which although more expensive, was the best fondant I had ever tasted and the easiest to work with. For a truly unique, personal touch, I inserted a small digital frame into the back of the cake that played a slideshow of pictures from my brother’s wedding. Just like a real camera! Amazing…

Well, at least when it comes to cakes. We may not be in Disney, but I’m sure the bride-to-be sure wishes she was. A self-proclaimed fanatic of all things Disney — her wedding dress is actually from a place called Cinderella Bridal — it seemed fitting that her bridal shower cake would be drawn from the same magical world. And who better to represent Disney than the classic Minnie Mouse?!

This was a chocolate cake filled with whipped banana cream and fresh bananas. The head and ears were formed out of rice krispie treats and then covered with molding chocolate. This was my first time working with molding chocolate, which was pretty cool..and tasty! It’s easy to work with since its very pliable (perhaps a little too pliable, as the warmth from my fingers would easily misshape the figure, so it was delicate to work with). But a good alternative to molding fondant, especially since it tastes 20x better!

One of the greatest days in history, the day my bestest was born!! An absolute cause to celebrate! Jess deserves the best, so I did it up this time with a special two tier cake. The bottom tier was a checkerboard cake of chocolate and vanilla, while the top tier was her other fave, Funfetti. I found the checkerboard cake pan in my mom’s pantry and from looking at the picture on the box, I’m pretty sure it was from the 80’s, or maybe even the 70’s. Ooo vintage! haha Decided to take on the challenge and give it a whirl. It was somewhat complicated and required the help of my sous chef (aka Kyle) but alas it came out faaaabulous! As usual, the cake was covered in fondant, and then sprinkled with some edible glitter.  The scroll work was all done freehand! My hands were trembling and cramped by night’s end!
